Lassi, the quintessential yogurt drink is a staple in summer especially in my hometown, Delhi. Spiked with sugar or black pepper and salt, it’s a healthy and refreshing drink much needed in the blistering Delhi summers. My kids adore mangoes, the incontestable uncrowned king of fruits in India. So here’s an icy treat which both kids and adults will relish – Mango Lassi Popsicles with Saffron and Mint.

Mango Lassi Popsicles with Mint and Saffron

Food that is at its freshest is also most flavorful. With summer at our heels, fruits are in abundance. Berries, Peaches, Melons, Mangoes etc…you name it and all farmer’s markets are brimming with sweet and juicy fruits. Whether you are relaxing by the pool this summer, mingling out-door in the heat, or throwing the biggest baddest firework bash in the neighborhood, this mango-licious refreshing beverage/dessert will surely take the edge off summer’s heat.

Mango Lassi Pops

Ingredients:

  • 1 ripe large mango (peeled, seed removed)
  • 4 teaspoons sugar
  • Pinch of saffron (steeped in ¼ cup hot water)
  • ¼ cup mint leaves
  • 1 cup plain yogurt (low fat or regular)
  • 1 cup milk (low fat or regular)

Mango Popsicles

Directions:

  1. Blend mango, mint, sugar, milk, yogurt, saffron with water in blender until smooth.
  2. Pour in popsicle molds and freeze for 4 hours to overnight.
  3. Serve chilled.

Note: If you can’t find ripe mangoes in your local grocery store, feel free to substitute with canned mango pulp in it’s own juices. Alfonso pulp works best for lassi.
