Sunday Supper Salud to Friends & Good Times via Mexican Fiesta!

I love cooking that said, an audience especially when they are friends, who share my laughter and sorrows are truly the best kind of audience. What better way to celebrate than with an evening surrounded with family, friends, and home-made comfort Mexican food?

Here is the menu I created for our Mexican themed night exclusively created for an audience which only eats poultry and seafood.

Mexican Twist to a Caipirinhas Cocktail
Cocktails
Pineapple – Habenaro Salsa
Tomatillo – Serrano Salsa
Agave Glazed Pork Belly with Charred Pineapple
Chorizo Filled Tamales with Mole (ultimate comfort food)
Tequila Lime Chicken doused with My ‘Secret’ Sauce
Super Crispy Fish Tacos with Chipotle Tartar Sauce
Churros Dusted with Cinnamon Sugar

A scrumptious menu for big gatherings or intimate family celebrations.

Caipirinhas Cocktail with Ginger and Mint

  • Peel from 4 large limes
  • 1 cup fresh lime juice
  • 8 1/4-inch-thick slices peeled fresh ginger
  • 1/4 cup sugar
  • 30 large fresh mint leaves plus more mint sprigs for garnish
  • 1 cup White Rum
  • 3 cups ice cubes
  • 5 cups ginger beer or genuine ginger ale

Directions:

  1. Muddle lime peel, ginger, sugar, mint, and lime juice.
  2. Add rum and refrigerate for 4-6 hours.
  3. Mix 3 cups of ice, ginger beer, and rum cocktail in a pitcher.
  4. Serve in cocktail glasses with ice and mint. Salud!!

 

Churros Dusted with Cinnamon Sugar

Oh so light and addictive.

  • 2 large eggs plus 1 large egg yolk
  • 6 tablespoons sugar
  • 2 1/2 tablespoons orange juice
  • 1 tablespoon finely grated orange peel
  • 1 1/2 teaspoons vanilla extract
  • 1 tsp orange extract (optional)
  • 3/4 teaspoons ground cinnamon
  •  1 1/2 cups self-rising flour
  • Cinnamon sugar

Directions:

  1. Whisk eggs, egg yolk,  6 tablespoons sugar, orange juice, peel, vanilla, orange extract and 3/4 tsp cinnamon. Let stand for 5 minutes.
  2. Stir in flour and spoon batter into a star tipped pastry bag.
  3. Fry in medium hot oil till golden brown.
  4. Toss in cinnamon sugar and serve immediately.
